Description: South African knifemaker David Hoehler specializes in chef's knives. Given that he worked in some of the best kitchens in South Africa for nine years, it is no surprise that he brings a unique understanding the chef's primary tool.
Like a chef's knife, the santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works especially well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the standard chef's knife, a santoku is very easy to maneuver—even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all.
The 7 inch blade is made from high performing 1070 carbon steel. The blade was acid etched and then satin finished. 1070 carbon steel will have exceptional edge retention and chip resistance. The blade tapers to a thin, keen cutting edge. The spine is nicely rounded for a comfortable grip. Because this kitchen knife is made from carbon steels, it should be dried and oiled after use to avoid rust and oxidation.
The Japanese-inspired Wa style handle is formed from stabilized and dyed maple burl. The ambidextrous handle provides a comfortable grip and keeps the knife extremely lightweight (only 5 oz!). Alternating bronze and yellow G10 spacers at the front of the handle assist the natural wood adjust to humidity and temperature changes in the kitchen. Like other knives, this knife should not be put in the dishwasher.
