Description: Oregon bladesmith Joe Edson specializes in straight razors and kitchen knives. As such, it's not surprising that his high performing chef's knives are razor sharp!
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
Joe began by creating a bar of san mai steel. Hitachi Aogami 2 (blue steel) steel is tremendously high performing. Layers of antique wrought iron surround the blue steel core with thin nickel spacers set between (for a bright line of silver moving through the steel). The top of the blade is forge finished. It is flat ground nice and thin behind the edge, providing great food release and clean slicing.
The handle combines stabilized curly koa wood with reconstituted stone spacers. The combination is extremely engaging! It is contoured for a secure, comfortable grip. The handle is so comfortable, you won't want to put this one down.
