You can think of a paring knife as a smaller version of a chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
Aaron forged the 4.2" satin finished blade from 52100 carbon steel. Many makers and collectors feel that this is the best steel available anywhere for use as a knife blade. The blade was oil quenched multiple times. Many thermal cycles and normalizing steps ensure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability. The blade is distal tapered for perfect balance and cutting efficiency.
Presentation grade Arizona desert ironwood scales are set on the full tang ensuring strength and durability. Three hand domed pins set the scales in place. The handle is contoured for a secure, comfortable grip, swelling toward the middle, moving into a slimmer waist, and swelling again at the end of the handle.
