Description: Australian knifemaker Towball Weightman is a friend of Mastersmith Bill Burke. Weightman's knives are works of art that excel in performance. This utility knife shows his expertise and his understanding of chef's knife geometry really shines through.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The 6-1/4 inch blade is a forged stainless san mai damascus. A high performing VG10 stainless steel core is surrounded by many layers of nickel damascus. The pattern is beautiful and immediately captivating. The san mai technique allowed Weightman to create softer, resilient sides, with a hard central core. This steel combines low maintenance with high performance. This knife is perfectly balanced and is one that you won't want to put down.
The traditional handle is octagonal at the top and rounded at the base. This shape is among the most comfortable of Japanese handle styles. The handle combines macassar ebony with buffalo horn.
