The gyuto is modeled after the French pattern chef's knife. Longer and slimmer than the santoku, it is suited to preparation of meat and may be used as a general purpose chef's knife. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance right. This knife has plenty of finger clearance for the rocking chop needed to chop onions and other vegetables.
The blade is formed from 52100 carbon steel and tempered to Rc 63. 52100 is considered by many knifemakers and knife users to be among the best steels ever used for knives. Makers like Mastersmith Bill Burke, Bob Kramer, and Ed Fowler have shown how incredible this steel can be. This carbon steel takes an incredibly keen edge that just keeps on cutting. The distal tapered blade creates a perfect balance. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust. A rounded spine and choil ensures the knife will be comfortable even after hours of use.
The "Wa" style handle is octagon in shape and is sculpted from African blackwood with a black micarta ferrule and stainless steel spacers. This ambidextrous handle is easy to grip and lasts a lifetime. Dark toned African blackwood is combined with a black micarta ferrule. This ambidextrous handle is easy to grip and lasts a lifetime. Like other kitchen knives, this knife should not be put in a dishwasher.
