Description: Paring knives are a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
Mastersmith Michael Rader is well known for both his dramatic swords and daggers, as well has his chef’s knives. His woodworking skills are beyond compare. His knives, which have exceptional edge holding, also have perfect balance and feel in the hand. This paring knife has been in a private collection since it was made in the spring of 2010, while he was a journeyman smith. It has been meticulously cared for and is in new condition.
The blade is hand forged 52100 carbon steel. Many knife collectors and chefs feel that 52100 is among the best, if not the best, steel for edge holding. The edge is extremely keen and will stay that way for a very long time. The blade features a differential heat treatment, resulting in a keen, long lasting edge, and supportive spine. A hand rubbed satin finish lends and heirloom quality.
The bolster is integral -- a technique that, while common in production knives, is very rare in handmade knives due to the difficulty of implementation. The handle combines striped bubinga wood with lacewood accents. The wood has been stabilized so that it will hold up well under the rigorous demands of either a home or commercial kitchen. Alternating copper and black G10 spacers assist the handle to adjust to temperature and humidity changes.
This paring knife is accompanied by a custom Kydex sheath.
The knife has perfect balance and feels great in hand.
