Description: Michael Rader, who was honored as a journeyman smith June 2006, is best known for creating dramatic swords and daggers with woodwork that is beyond compare. When he puts his attention to creating chef's knives, the results are exceptional.
Like his hunting knives, this chef's knife was pre-tested for edge flex and cutting ability before assembly. The nakiri is a traditional Japanese knife shape ideal for chopping fruit and vegetables. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to a meat cleaver.
The blade was forged using a san mai technique. Damascus steel forged in a complex random pattern incorporates 15N20 and 8660. A 52100 carbon steel core results in exceptional cutting ability. 52100 is considered by many knifemakers and collectors to be among the best -- if not the best -- carbon steel for edge holding. The damascus bolster is integral -- a technique that, while common in production knives, is very rare in handmade knives due to the difficulty of implementation. The handle is formed from two sections of exhibition grade Hawaiian curly koa wood. The front section is a lighter wood with a gently undulating pattern. The darker accent section has a very tight. The wood has been stabilized so that it will hold up well under the rigorous demands of either a home or commercial kitchen. The knife has perfect balance and feels exceptional in the hand.
