Description: Jean Wilke is a custom knifemaker from Pretoria, South Africa. His knives are exceptionally well designed and tested. His attention to detail is clearly evident in each of his creations. He is currently working with Mastersmiths Kevin and Heather Harvey, travelling back and forth every two weeks, alternating between working at Heavin Forge and home forge, Fire Goby Forge. It is very exciting to see such a young make with such tremendous talent.
This chef's knife is a perfect choice for the cook that prefers a mid-sized knife. The 7-2/3 inch blade ensures that knife is easy to maneuver and has perfect balance, while also having plenty reach. Whether slicing, dicing, or chopping, this hand forged chef's knife will make easy work of the task. It is sure to become a kitchen favorite.
The blade is hand forged 52100 carbon steel for a chip-resistant, razor sharp edge. Many knife users and knifemakers feel that 52100 is among the highest performing (if not the best!) steels currently used to make knives today. An antiqued finish helps protect the knife from rust, though we recommend using camellia oil after use to make care even easier. The spine and choil are nicely rounded for comfort. An undulating heat treatment line travelling across the blade shows the transition between the ultra-hard cutting edge and softer, supportive spine. Wilke's maker mark is on the left side.
The handle is dyed and stabilized maple burl. It swells at the palm before moving into a slimmer waist to provide a comfortable, slip-resistant grip. A Karelian burl spacer adds a nice contrast between the handle and bolster. Like other knives, this knife should not be put in the dishwasher.
