Description: Dale Miller has been making knives since 2015, after many years of working in wood, building musical instruments, speakers, hand planes, and other pieces. He uses knives in the kitchen, regularly making charcuterie and tsukemono (Japanese pickles) and uses this experience to inform his knife design and execution. His mission is to make functional, beautiful knives out of the best available materials.
This all-purpose chef's knife was hand forged from a 4” long piece of 8670 steel. It was forged to final size, including the profile, blade bevels, and the flaring on the heel and belly-side of the tang for comfort in your hand. African blackwood handle scales are glued to the tang and reinforced with domed brass pins. 8670 is a nickel-chromium alloyed steel which has high toughness. The low alloy content also makes it good for forging. This blade was heat treated to Rockwell 61–62, and still has high toughness at this hardness.
The upward-swooping handle provides finger clearance when rock chopping, making this an ideal all-purpose knife for someone who prefers a smaller, more easily controlled knife.
