A bunka is a Japanese general purpose chef's knife. Like the santoku, the bunka is a knife of many talents that can easily handle all the basic kitchen cutting tasks. Slightly shorter than the standard chef's knife, the bunka is light, agile, and very easy to maneuver. There's plenty belly curve to enable rocking cuts, which just adds to the bunka's versatility.
The 6-3/4 inch blade is forged from ApexUltra. ApexUltra is a revolutionary new steel developed specifically for handmade knives. ApexUltra has extremely high edge retention and it is particularly good at maintaining its toughness at high hardness, which makes it good for thin knives with superior cutting ability. It was designed by Larrin Thomas, Tobias Hangler, and Marco Guldimann. It is a low alloy design that is forgeable, forge-weldable, and its fine carbides make the steel relatively easy to sharpen. With its high purity and well-balanced alloy composition it has very high toughness in the 66+ HRC range along with excellent edge retention. We recommend using camellia oil after use to avoid rust and oxidation.
The ambidextrous Japanese-inspired handle is a style called a half-round. The faceted top is matched with a rounded base for comfort. The handle is warm toned Arizona desert ironwood. A copper spacer assists the handle to adjust to temperature and humidity changes -- as well as brining out warm tones in the presentation grade wood. The handle is comfortable in both a pinch grip and a full handle grip. Like other knives, this knife should not go in the dishwasher.
