Description: Slicing knives are a perfect choice for precise cuts in the kitchen, effortlessly portioning roasts and other meats. The long, thin blade allows you to slice with one long stroke, instead of sliding the knife back and forth in a sawing motion. The result is a superior, clean cut.
The 11-1/3 inch blade is forged from 52100 carbon steel and features an antiqued finish to provide limited rust resistance. Many knifemakers and metallurgists feel that 52100, with its small crystalline size, tremendous edge stability and toughness, is among the best carbon steels used in knifemaking today. Dale brought the steel to 64 Rockwell, ensuring a keen, long lasting edge. Dale's touchmark is on the left side of the blade.
The handle is inspired by the ambidextrous octagonal Japanese handle. It combines Arizona desert ironwood, Gabon ebony, and moose antler into a dramatic handle. An Argentium silver spacer separates the ironwood from the gabon ebony. The slender handle is lightweight and feels great in the hand. Like other knives, this knife should not be put in the dishwasher.
