Description: This exceptional Scimitar Butcher's Fillet knife is the work of Argentinian knifemaker Pablo Untroib. Pablo lives in Buenos Aires. He specializes in knives for professional and amateur cooks as well as making outdoor knives.
The Butcher's Scimitar is designed to cleanly and confidently divide large cuts of meat. While commonly seen in professional butcher shops, it is equally useful at home or out in the field. This is the perfect knife for breaking down large cuts of meat bought at a store, such as whole loins and shoulders, into smaller portions. Hunters will often use this style of knife for processing large game themselves rather than pay a butcher shop to do it. It is also the preferred knife for filleting salmon and other large fish, removing their fins, and even the head! Whether used on fishing trips or in the kitchen, this scimitar will be a workhorse!
The blade is O2 carbon steel. At Hrc 60, it will have a keen, long-lasting edge. An elegant forced patina provides limited rust resistance and helps you get comfortable working with carbon steels. Because this knife is made from carbon steel, we recommend camellia oil to avoid rust and oxidation.
Guayubira wood (Patagonula Americana) handle scales are set on the full tang for strength and durability. Guayubira is native to Argentina. It is an extremely dense, durable wood with tremendous beauty. Its name is derived from gua (tree in Guarani) and yevi (meaning elastic). It is perhaps no surprise that it will easily hold up to the heavy demands of either a home or commercial kitchen. The domed handle is nicely contoured so that it fits most hands.
The knife is accompanied by a leather sheath. This well-balanced butcher's scimitar knife can be used for hours without fatigue. It is a perfect choice for both home and commercial chefs - as well as fisherman.
