Description: Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment and forging techniques result in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
Like a chef's knife, the santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works especially well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the standard chef's knife, a santoku is very easy to maneuver — even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all.
Like his hunting knives, this chef's knife was tested for edge flex and cutting ability before assembly. The heat treatment followed the formulas developed Bill Burke in conjunction with Mastersmith Ed Fowler. The blade is hand forged 52100 carbon steel with a low temp triple quench and triple temper. Many knife users as well as knifemakers feel that this combination results in the best performance currently found in the knife industry. This technique, combined with Bill's choice of steel, creates some of the sharpest and most long lasting edges found anywhere. A rounded spine and choil ensure the knife will be comfortable even after hours of use. Bill's mark is engraved on the left side and his M.S. mark is on the right side.
The handle is highly figured, stabilized box elder burl (Acer negundo). It is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the end of the handle. 416 stainless steel bolsters are shaped to comfortably accommodate a pinch grip. We recommend using camellia oil to oil the blade and natural wood handle. Like other knives, this knife should not be put in the dishwasher.
