Description: De Wet van Zyl is a bladesmith from Durban, South Africa. He started making knives in 2005 and has been a full time knifemaker since 2007. He spent two years apprenticing with Mastersmiths Kevin and Heather Harvey at Heavin Forge in Belfast, Mpumalanga before opening Darkwing Blades in April, 2009. He was named as a Maker to Watch by Blade Magazine and has won numerous awards over the years.
This 7-1/2 inch chef's knife is a perfect all-purpose blade ideal for a wide variety of cutting tasks — slicing, dicing, and chopping fruits, vegetables, meats and other foods. With its curved belly, this chef's knife can also be gently "rocked" through fresh herbs or spices to produce a very fine mince. It is the perfect size for the chef that prefers a more compact, easier to control knife.
The blade is forged from van Zyl's own mosaic damascus. A high performance O1 carbon steel core edge us fordge welded to mosaic damascus, combining 5160, EN45, and nickel. The highly controlled mosaic damascus pattern shows De Wet's incredible skill at the forge. Because the blade is forged from carbon steels, we recommend camellia oil to avoid rust and oxidation
The handle is inspired by traditional Japanese handles. The ambidextrous octagonal handle provides a sure grip that will remain comfortable after hours of use. The handle is dyed and stabilized maple burl. The front of the handle is sealed with a bronze ferrule. A woolly mammoth molar spacer adds dramatic contrast.
Exceptional work throughout! This knife is sure to become a kitchen favorite.
