Description: This exceptional chef's knife was hand forged by Journeyman Smith Mak Kelsay in Chattanooga, Tennessee. Kelsay began his blacksmithing journey in the spring of 2017 when he joined Choo Choo Forge and immediately began their green coal program. He was immediately addicted. Since then, he has learned from some of the best in the industry -- folks like Lyle Wynn, Clay Spencer, Mike Lammare, Mark Aspery, Pete Brasspenninx and many others. In June, 2021, he was honored to become an ABS journeyman smith. Kelsay specializes in chef's knives -- knowing that his knives will be used each day in home and commercial kitchens. This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited as a general purpose chef's knife. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board.
The 8 inch san mai blade combines a 52100 carbon steel core with wrought iron cladding recovered from a Chattanooga train. The spine of the knife features a forge finish moving into a hand rubbed satin finish as it approaches the cutting edge. The spine and choil are nicely rounded for comfort.
The Japanese-inspired octagonal handle is ringed gidgee. Ringed gidgee (Acacia cambagei) is an exceptional wood for knife handles and is considered to be one of Australia's most beautiful timbers. It has tremendous stability even when exposed to fluctuations in humidity and temperature. It is among the densest woods in the world and has a beautiful curl similar to Hawaiian koa. The handle is finished with silicon bronze spacers and black G-10 ferrule to seal the front of the handle from water. Like other knives this knife should not be put in the dishwasher.
To protect the knife during transportation a black leather slip sheath is included.
