Description: Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment and forging techniques result in edge holding that is far beyond other knives. This chef's knife is sure to become a kitchen favorite -- it is a knife that you won't want to put down.
The 8 inch blade is forged from Bill's own double river of fire damascus forged from 1084 and 15n20 carbon steels to ensure excellent edge holding and chip resistance. Two river of fire billets are laminated together in opposite directions creating an extremely engaging pattern. The spine and choil are rounded for additional comfort. Burke's understanding of chef knife geometry is unmatched. This is as good as a chef's knife can get! Bill's touchmark is engraved on the left side of the knife and his M.S. mark is on the right side. Because this knife is forged from carbon steels, we recommend using camellia oil to protect the blade and wood handle.
The handle is exhibition grade curly koa (acacia koa). This durable stabilized wood is only found on the Hawaiian islands and is one of the most desired woods used in knifemaking. The scales are perfectly fit to polished 416 stainless steel bolsters. Like other knives, this knife should not be put in the dishwasher.
