Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment and forging techniques result in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
This high performance chef's knife is a perfect choice as a primary choice in the kitchen. The Japanese-profiled blade is great for slicing and chopping vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
Like his hunting knives, this chef's knife was tested for edge flex and cutting ability before assembly. The heat treatment followed the formulas developed Bill Burke in conjunction with Mastersmith Ed Fowler. This technique, combined with Bill's choice of steel, creates ensures some of the sharpest and most long lasting edges found anywhere. A rounded spine and choil ensure the knife will be comfortable even after hours of use.
The handle is rosewood set to the full tang with three Corby hidden bolt rivets. A distal tapered tang ensures perfect balance. This resinous wood holds up beautifully to the heavy demands of either a home or professional kitchen. The handle is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the end of the handle. Like other knives, this knife should not be put in the dishwasher.
