Description: Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment and forging techniques result in edge holding that is far beyond other knives. This is a knife that you won't want to put down.
The blade is hand forged in a technique known as san mai. A dramatic stainless nickel damascus is forged to the sides of a high performance SG2 stainless steel core. The polished surface is extremely dramatic. SG2 is among the highest performing stainless steels used to build knives. By using SG2, Burke ensures this knife will be as easy to take care of as it is high performance.
The heat treatment followed the formulas developed by Burke in conjunction with Mastersmith Ed Fowler and creates some of the sharpest and most long lasting edges found anywhere. The blade is triple quenched and triple tempered for optimal edge holding and durability.
The handle is extremely rare Arctic muskox horn. Muskox horn is one of the most rare and majestic handle materials used in the knife world. The highly polished horn has a unique grain structure that immediately grabs the eye. It is nicely contoured to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the beak at the end of the handle. Muskox horn, which is quite resilient, is a perfect choice for use in either a home or commercial kitchen. Handle scales are set in place with three stainless steel hidden bolt rivets.
