Description: Master Smith David Lisch is an knifemaker located outside of Seattle, WA. Over the last several years, David has been creating some of the best chef's knives to be found anywhere. As well as being a bladesmith, David is a renowned blacksmith and teacher of knifemaking at the Studio 4 School, which he runs. David's control over damascus, as shown in this dramatic chef's knife, is amazing. He creates patterns that are uncompromisingly clean and controlled. This elegant santoku has been in a private collection. It was made while David Lisch was a Journeyman Smith. It is in new condition and has not be used. By all appearances, it could have been made yesterday.
The 6-1/4 inch damascus blade is forged to shape from David's own mosaic damascus. The polished mosaic damascus is a fine swirling explosion pattern and immediately grabs attention. The mosaic pattern shows Mastersmith David Lisch's skill at the forge. By forging closely to shape, David creates an optimal grain structure (performance) and creates a pattern that follows the shape of the blade (dramatic as all heck!). David is known for his particularly clean, detailed damascus. The spine and choil are perfectly rounded for comfort. The convex ground blade offers an optimal balance of thin precision with food release from the side of the knife. Whether slicing tomatoes or chopping onions, this is a perfect knife to grab.
Like a European chef's knife, the santoku is a multipurpose knife used for just about every cutting job in the kitchen. The name means “three virtues.” Depending on who you ask, this refers either to the three types of foods it works especially well with — vegetables, proteins, and fruit, or for the three types of cuts at which it excels: slicing, dicing, and chopping. Slightly shorter than the European chef's knife, a santoku is very easy to maneuver—even in a smaller kitchen. There's plenty belly curve to enable rocking cuts, which enhances the knife's versatility. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all.
Showing his tremendous skill at the forge, the bolster is integral. Though this technique is regularly done in production knives, forging an integral bolster in a custom setting is extremely difficult and shows the maker's skill at its best. The handle scales are set on a distal tapered full tang, which is a particularly difficult technique. Lisch performed it to perfection!
The handle is hand contoured stabilized curly koa. This dramatic wood has an elegant curl and tremendous chatoyancy. By using stabilized wood, Lisch ensures the handles will hold up well to the high demands of either a professional or home kitchen.
