Description: Handmade by Journeyman Smith Jim Arbuckle, this small chef's knife is a perfect choice for chopping in the kitchen. From mincing garlic and shallots to chopping fruits and vegetables, this 4-2/3 inch chef's knife is a great choice for the cook who prefers a smaller knife, but wants finger clearance over a cutting board to allow for a comfortable rocking chop!
The 4-2/3 inch blade is hand forged SG2 san mai damascus. A central bar of Takefu SG2 powdered metallurgical stainless steel is surrounded by alternating layers of stainless steel and nickel. At Hrc 63-64, this chef's knife has among the best edge holding of any Arbuckle knife ever made -- yet it is stainless steel. The resulting damascus is high contrast and immediately captivating. The blade is convex ground to minimize food sticking to the blade. This technique is much more effective than a granton edge! The blade is distal tapered, ensuring a perfect balance.
The ambidextrous octagonal handle is inspired by traditional Japanese chef's knives. The front of the handle is sealed with a carved 416 stainless steel bolster. The handle allows for several different grips and makes the knife easy to maneuver even with slippery hands.
