A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The blade is forged from Bill's own mosaic damascus, combining 1080 and 15n20 carbon steels for excellent edge holding and chip resistance. The dense pattern is extremely engaging and encourages further examination. The spine and choil have been nicely rounded for comfort. Bill's maker mark is on the left side of the blade and his M.S. mark is on the right.
The ambidextrous Japanese-inspired half-octagonal handle is faceted at the top and rounded at the base. This shape is among the most comfortable of traditional Japanese handle styles. The handle combines chechen burl (Metopium brownei) with an African blackwood (Dalbergia melanoxylon) ferrule. Chechen is an exotic Mexican wood popular with woodworkers. African blackwood is among the most dense woods in the world, highly prized for its jet black appearance. A silicone bronze spacer adds a nice transition between the two materials and will help the woods adjust with humidity and temperature changes in the kitchen.
