Description: Mastersmith Aaron Wilburn, a long time maker of knives for the outdoor enthusiast, has expanded his focus to include culinary knives - creating high-performing kitchen workhorses! They have become exceptionally popular among chefs. This integral chef's knife is the perfect daily use workhorse for either at home or professional kitchen.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited as a general purpose chef's knife. Whether slicing, chopping, mincing, or dicing, this comfortable knife will do it all. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The hand forged blade is 52100 carbon steel with a hand rubbed satin finish. 52100 is considered by many knifemakers and knife users to be among the best steels (if not the best!) used in modern knifemaking. It combines exceptional edge holding with durability and ease of sharpening. Many thermal cycles and normalizing steps ensure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability. Because this knife is forged from carbon steel, we recommend using camellia oil to prevent rust and for oiling the natural wood handle.
The hand contoured handle is African blackwood (Dalbergia melanoxylon). This dense, nearly jet black wood holds up beautifully to the demands of either a homer or commercial kitchen. The integral guard is sculpted to accommodate a comfortable pinch grip. Creating an integral guard is particularly difficult but creates a knife with superior structural integrity. The knife is feels great in the hand and balances perfectly right in front of the handle. This chef's knife is sure to become a kitchen favorite - you won't want to put it down!
Exceptional work throughout!
