This exceptional paring knife is the perfect length for detail-oriented tasks, from removing the tops from strawberries and tomatoes to the eyes from potatoes. Any time you need precision cutting that is more exact, a paring knife is a good choice to grab for.
The blade was hand forged. A Shiro 2 carbon steel core is surrounded by stainless steel. Thin nickel layers between the carbon steel and stainless steel stop carbon migration and make the transition particular dramatic. The blade is distal tapered for perfect balance and efficient slicing. This style of blade has the performance of carbon steel with somewhat easier care. Because the core is carbon steel, we recommend using camellia oil to avoid rust and oxidation.
The ambidextrous traditional Japanese handle combines Macassar ebony with a buffalo horn ferrule. The handle is rounded at the base and features a faceted top. This style of handle, sometimes called a half round, is among the most comfortable of traditional Japanese knife handles. Like other knives, this knife should not be put in the dishwasher.
