Description: De Wet van Zyl is a bladesmith from Durban, South Africa. He started making knives in 2005 and has been a full time knifemaker since 2007. He spent two years apprenticing with Mastersmiths Kevin and Heather Harvey at Heavin Forge in Belfast, Mpumalanga before opening Darkwing Blades in April, 2009. He was named as a Maker to Watch by Blade Magazine and has won numerous awards over the years.
This utility knife is a great compromise between a chef's knife and a paring knife. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are also sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The blade was forged from van Zyl's own damascus san mai. A high performance O1 carbon steel core is surrounded by alternating layers of 5160, k600, 01 and ferro nickel. Because the blade is forged from carbon steels, we recommend camellia oil to avoid rust and oxidation.
The handle is inspired by traditional Japanese handles. The ambidextrous octagonal handle provides a sure grip that will remain comfortable after hours of use. Dyed and stabilized curly maple meets perfectly with a brass ferrule, sealing the front of the handle.
Exceptional work throughout! This knife is sure to become a kitchen favorite.
