Description: Brian Hanson is a bladesmith located in Washington State. He worked for over a decade as a fine dining chef in various Seattle restaurants, but during Covid he made the decision to change careers and start working as a bladesmith. He now makes high performance kitchen knives that he hopes fellow chefs will love to use both at home and professionally in the kitchen.
The French-styled oyster knife utilizes its thin blade to slide through the side of the oyster shell, precisely severing the abductor muscle. Then simply pulling back the top shell will reveal a beautiful unscathed oyster, free of any broken shell shards. This delicate approach is ideal for those wishing to present the purist oyster experience.
The blade is hand forged from 80CrV2 carbon steels to provide a high performance, long lasting edge. This carbon steel combines good edge holding with ductile strength, making it a perfect choice for a traditional oyster knife. Brian's maker mark is on the right side of the blade. Because this knife is forged from carbon steels we recommend camellia oil to oil the blade and natural wood handle.
Premium South American cocobolo (Dalbergia retusa) handle scales are set on the full tang, ensuring strength and durability. The handle is nicely rounded for a secure, comfortable grip. Cocobolo is well known for its resilience and durability.
