Description: Andy Burke is the 31 year old son (as of 2022) son of renowned Mastersmith Bill Burke. Over the years, Andy has had the opportunity work with Bill and he has created some truly spectacular knives. Andy makes a range of knives from kitchen knives to hunting knives, and folders.
This utility knife is a great compromise between a chef's knife and a paring knife. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are also sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The 6-1/8 inch blade is hand forged 52100 carbon steel. Many knifemakers as well as knife users feel that 52100 is among the best (if not the best) steel used in the modern knife industry. It provides an exceptionally keen, long lasting edge. A differential heat treatment ensures a hard, long lasting edge, with a softer, supportive spine. The blade is antiqued for an heirloom appearance. Andy's maker mark is on the left side of the blade. Because it is forged from carbon steel, we recommend using camellia oil to oil both the blade and natural wood handle.
Hand contoured, presentation grade Arizona desert ironwood handle scales provide a sure, comfortable grip. Like other knives, this knife should not be put in the dishwasher.
