Description: I was very excited when I was introduced to Dan Bidinger at 2019 Blade West in Portland, OR. Though Dan didn't have a table, his work spoke for itself. Bidinger brings a tremendous amount of skill, precision, and design to his knives. Since then, his work has continued to develop. He is creating some of best chef's knives found anywhere.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The blade is well suited for slicing vegetables, meats, and more. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 8-1/2 inches, it is a perfect size for either the professional or home chef. It is easy to control and has enough reach to get most any job done. At 6-2/3 oz, this knife is exceptionally nimble.
The blade is high performing AEB-L stainless steel. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. AEB-L was developed for razor blades with a very fine grain structure making it easy to sharpen while maintaining good edge holding capabilities. At 63 Hrc, the blade will have exceptional edge holding. The blade features a "B" grind. A convex edge moves into a deep hollow grind followed by a second larger hollow grind. This technique lightens the overall weight without sacrificing strength and provides excellent food release. This combination ensures a high performing workhorse with virtually no resistance cutting through foods that would otherwise stick or wedge.
The handle is carbon fiber set on the full tang using carbon fiber pins. Natural Micarta liners add an elegant contrast against the jet black scales. Both the tang and blade are distal tapered, providing an exceptional balance. The hand contoured handle will be extremely comfortable even after hours of chopping. This is a knife you won't want to put down!
