Description: Handmade by Jim Arbuckle, this paring knife is an excellent choice for the chef that wants a knife that is as attractive as it is useful. This piece is handmade and one-of-a-kind - there's not another one like it in the world!
This paring knife is a perfect choice for detail tasks - from taking the eyes out of potatoes to removing the heads from tomatoes. The short, thin blade combines control and precision.
The blade is made from high performing, low care 154CM stainless steel. It has an heirloom quality hand-rubbed satin finish. It was hardened and triple tempered to Rc 59-60 for excellent edge retention. The blade is distal tapered, ensuring it is nimble and easy to control. The durable blade is convex ground for food release and chip-resistance.
Charcoal Dymalux handle scales are set on a full tang for strength and durability. Dymalux will hold up exceptionally well to the high demands of either a commercial or home kitchen. Modified bamboo filework between the scales has been filled with black epoxy and polished. This gives the beauty of filework without the hassle of cleaning food particles out of it. The handle is contoured with a deep choil - this semi-circular cut-out allows the forefinger to rest comfortably and makes the knife easy to hold in several different grip options.
