The nakiri chef's knife is a traditional Japanese knife ideal for chopping and slicing fruits and vegetables, as well as boneless meats. The edge is double beveled, like a Western knife. Though sometimes called a vegetable cleaver, the thin edge geometry makes it a precision tool, rather than a Japanese equivalent to meat cleavers. The nakiri chef's knife is a tremendously versatile kitchen tool. Whether slicing onions or julienning carrots, once you try one, you'll wonder what you ever did without it.
The blade is 1095 carbon steel with a dramatic forced patina. The blade was heat treated to 60 Hrc, ensuring a keen, long lasting, yet resilient edge.
The octagonal handle is inspired by traditional Japanese handles. Spalted birch front and rear sections surround an ancient woolly mammoth tooth spacer. By using stabilized wood and molar, Forselius ensures the knife will hold up well to the high demands of either a home or commercial kitchen.
The knife is accompanied by a hand tooled leather sheath for easy transport.
