Description: David Tuthill has been a blacksmith for many years, creating elegant ornamental ironwork. Over the last few years, his attention to detail and skills in the forge have quickly brought him to create world class chef's knives.
This santoku will be an exceptional multipurpose chef's knife. From mincing and chopping garlic or chives, to preparing full meals, this will be your go-to knife! The blade height gives plenty of clearance over a cutting board, while the 6-1/2 inch blade is easy to maneuver. The distal tapered blade provides perfect balance.
David began forging the blade by surrounding 52100 carbon steel with antique wrought iron. A thin layer of nickel separates the two primary layers, stopping carbon migration and results in a particularly dramatic transition between the layers. The antique wrought iron has a subtle damascene pattern that is tremendously engaging. Many knifemakers and knife users feel that 52100 carbon steel is among the best, if not the best, steel used to make modern knives. It ensures that this knife will have an extremely sharp edge, and hold onto it. Because this knife is forged from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
The ambidextrous Japanese-inspired half octagonal handle is faceted at the top and rounded at the base. This shape is among the most comfortable of traditional Japanese handle styles. The handle combines stabilized Australian beefwood (Grevillea striata) with a buffalo horn ferrule. Beefwood is exceptionally dense, ensuring a strong, durable, and beautiful handle.
