Description: Burls & Steel is a husband and wife team based in Charleston, South Carolina. Ben Spurrier is the bladesmith who creates all of the knives and his wife Sydney handles all the marketing and photography. This knife is a perfect compromise between a petit chef and a utility knife. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. The blade is just tall enough to give plenty of finger clearance over a cutting board. Utility knives are also sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The blade was hand forged to shape from 1095 carbon steel and features a satin finish. 1095 carbon steel is tough, chip resistance, has great edge retention -- plus, it is easy to sharpen. This makes 1095 an excellent steel for a heavy use knife. Forge marks on the spine show the knife was forged closely to shape and will help facilitate food release. The spine and choil have been nicely rounded for comfort. Because this knife is forged from carbon steels, we recommend using camellia oil to avoid rust and oxidation.
The ambidextrous Japanese-inspired octagonal handle is formed from stabilized maple burl secured to the tang with a brass pin. The swirling figure of the maple is extremely engaging. The handle is finished with a brass spacer. The handle will be extremely comfortable even when working for many hours. This is a knife you won't want to put down!
