Description: Journeyman Smith Erik Fritz has been working on chef's knife the last few years and his knives are been amazing! His friendship with Mastersmiths Bill Burke and Wade Colter has been a real boon. Bill has worked with Erik to best understand the ideal geometry for chef's knives and has shared his coveted heat treating techniques for an ultra-high performance blade.
The 8-1/2 inch blade was hand forged from 52100 carbon steel. It is nicely distal tapered for optimal balance. Many makers and users feel that 52100 carbon steel is among the best, if not the best steel used on knives! Because this knife is carbon steel, we recommend using camellia oil to avoid rust and oxidation. A convex grind assists food release. The spine is nicely rounded for comfortable grip -- even when used for hours at a time. This knife is perfectly balanced and is not one that you'll want to put down. Because this knife is forged from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
Black Micarta handle scales are set on the full tang for strenghth and durability. It has been nicely carved so as to swell at the palm, move into a slimmer waist, and swell again as it approaches the end of the handle. A 416 stainless steel bolster seals the front of the handle.
Exceptional work throughout!
