Description: This custom 5-1/2 inch chef's knife was made by Steve Grosvenor (Red Rock Tools) of Beresford, South Dakota. Steve is a Forged in Fire champion (season 4, episode 9) and an American Bladesmith Society Journeyman Smith. He is also a former US Army Airborne Infantry solider and fabricator. Today, he is a full time bladesmith specializing in the high performance forged blade.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The blade is well suited for chopping vegetables and slicing meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. At 5-1/2 inches, it is a perfect knife for the chef that prefers a smaller, more maneuverable knife. It combines ease of control with a size that is perfect for preparing full meals.
The blade is high performing 52100 carbon steel. 52100 is considered by many knife makers and knife users to be among the highest performing steel used to make knives today. Because this knife is made from carbon steel, it needs to be oiled and dried before being put away. We recommend using camellia oil to oil the blade and tang. At 62 Hrc, this knife will hold an exceptional edge.
Maple burl handle scales are set on the full tang for strength and durability. The scales are double dyed and stabilized so as to hold up beautifully to the demands of either a home or commercial kitchen. The hand contoured scales are extremely comfortable and are carved to accommodate a pinch grip. Like other knives, this knife should not be put in the dishwasher.
Excellent work throughout!
