Description: The chef's knife is the primary knife used in the kitchen, easily handling almost all culinary tasks. This 6-3/4 inch chef's knife by Dale Miller is light, agile, and very easy to maneuver. There's plenty curve to enable rocking cuts, which just adds to its versatility. Whether slicing, chopping or dicing, this chef's knife is sure to be a favorite in your kitchen!
The blade was hand forged from high performing 52100 carbon steel. Many knifemakers and metallurgists feel that 52100, with its small crystalline size, tremendous edge stability and toughness, is among the best carbon steels used in knifemaking today. Dale brought the steel to 63 Rockwell, ensuring a keen, long lasting edge. A coffee etch provides a dark appearance that will help prevent oxidation. The blade features an S-Grind. A convex ground edge provides high performance chopping with lots of strength. From there, it moves into a concave and the blade moves toward the spine. This technique lightens the overall weight without sacrificing strength. The combination ensures a high performing workhorse with virtually no resistance cutting through foods that would otherwise stick or wedge. Because this knife is made from carbon steel, we recommend using camellia oil to avoid rust and oxidation.
The handle is formed from curly Pyinma. This wood is native to Southeast Asia and has an incredible curly grain structure. The highly polished, gloss handle is finished with ten coats of Tru-Oil for a long lasting, resilient handle. Spacers are formed from mammoth ivory and African blackwood which provides a pleasant transition from handle to blade. A natural check in the ancient ivory has been perfectly sealed and stabilized. The handle features an heirloom fit between the bolster and handle. This is done partially for looks, but also for changes in temperature and humidity. The handle is nicely contoured for a secure, comfortable grip, even after hours of use. Like other kitchen knives, this knife should not be put in a dishwasher.
