Description: Mastersmith Bill Burke's chef's knives are among the highest performing cutlery found anywhere. His heat treatment technique, combined with his choice of steels, result in edge holding that is far beyond other knives. This is a knife that you won't want to put down!
This incredible chef knife won Best Chef Knife at the 2021 International Custom Cutlery Exposition. This is no surprise because this knife shows Bill's forging skills at its best. The blade was forged so closely to shape that very little grinding was required afterward. This allows the forge texturing to remain on most of the blade giving the appearance of a 100 year old knife. As if that wasn't enough Bill even forged to bolsters to shape to give them the same timeless appearance. This requires a particularly talented smith with exceptional forging skills to pull off!
This high performance chef's knife is a perfect choice as a primary choice in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board.
The blade is hand forged from 52100 carbon steel with a low temp triple quench and triple temper. The heat treatment followed the formulas developed by Bill Burke in conjunction with Mastersmith Ed Fowler and creates some of the sharpest and most long lasting edges found anywhere. Many knife users as well as knifemakers feel that this combination results in the best performance currently found in the knife industry.The spine has been nicely rounded to provide a comfortable pinch grip. The blade is convex ground to provide better food release.
African Blackwood (Dalbergia melanoxylon) scales are heirloom fit to the full tang using three stainless steel hidden bolt rivets. An heirloom fit gives the natural wood room to expand and shrink over time without exposing the tang. African blackwood is considered to be among the hardest and densest of woods in the world and is highly desirable for its jet black appearance. The handle is nicely carved to swell toward the front of the handle, move into a slimmer waist and finally to swell again at the end of the handle. The forged bolsters accomadate a comfortable pinch grip. The knife has excellent balance and feels exceptional in hand. This is a knife you have to pick up to fully appreciate! Like other knives, this knife should not be put in the dishwasher.
