Description: Mastersmith Kevin Harvey is well known for his tremendous attention to detail -- only matched by his skill at design. This kitchen slicer from Mastersmith Harvey is a spectacular knife.
This utility knife is between a chef’s knife and a paring knife, but its blade is narrower and straighter. It's perfect for a multitude of small tasks where more precise cuts are needed such as trimming broccoli, green beans, or other smaller vegetables. Others like its smaller size as an alternative to the chef’s knife. Its slightly curved belly enables it to do moderate rocking cuts. It is nimble enough to peel an onion in hand, then slice it up in short order. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The 7-1/2 in. blade was forged to shape from Kevin's own san mai damascus. A central core of Bohler K510 tool steel is surrounded by random pattern damascus sides. Bohler K510 is tough, chip resistant, and holds an excellent edge due to its high carbon content. The slightly thicker shinogi ridge will provide excellent food release from the side of the blade.
The ambidextrous Japanese-inspired octagonal handle is formed from stabilized spalted London plane (Platanus x acerifolia) wood. Dark spalting lines moving through the light grain is extremely pleasing. A ferrule formed from Cape buffalo horn with fiber spacers helps the handle adjust to humidity and temperature changes in the kitchen.
To keep the knife protected when in storage, a saya custom made from bird's eye maple (Acer sacchurum) is included. A wild olive (Olea europaea sbsp. Africanm) saya pin locks the knife safely in the saya.
