Description: Oregon bladesmith Joe Edson specializes in straight razors and kitchen knives. As such, it's not surprising that his high performing chef's knives are razor sharp! I have watched Joe's work develop over the last couple of years and the knives he is creating are truly exquisite! This beautiful chef knife could easily because a family heirloom that will last for generations to come!
This custom chef's knife by Joe Edson is a perfect 'go to' knife. It's used for all-around food preparation. Inspired by the Japanese gyuto, it has less curve than a Western chef's knife, which means it contacts the cutting board along more of its length, so more food is cut per slice. The gyuto has a gentle roll off the tip compared to the large roll of a Western style knife, so it needs to be lifted less, making cutting more efficient.
Joe began by creating a bar of san mai damascus steel. Hitachi Shirogami 2 (white steel) steel is tremendously high performing, with an extremely keen edge. 22 layers of carbon steel damascus surround the white (Shirogami 2) steel core. The flat is forge finished. The sides feature an s-grind to provide great food release and clean slicing. The spine and choil are nicely rounded for comfort.
The handle combines stabilized and dyed maple burl with 3 line green and gold paper G-carta made by G.L. Hansen & Sons. The handle is hand contoured to encourage a pinch grip, though is equally comfortable when held further back as well. Stacked black and blue G-carta adds a nice transition between handle and ferrule. The handle feels great and the knife has perfect balance.
