Description: Florida knifemaker Edward Ratanun (Edward R Knives) creates a spectacular chef's knife. His sense of design is only matched by his skill of implementation. These utility knives inspired by the high performance knives of Japan are a prime example of Edward's clean work.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The blade is formed from high performing Nitro-V stainless steel with a hand rubbed satin finish. Nitro-V is a martensitic stainless steel with a chromium-based composition created by the New Jersey Steel Baron company. Nitrogen and vanadium have been added to the composition of AEB-L to improve edge performance. The resulting blade has an extremely keen, long-lasting edge and is just as tough or tougher than similar carbon steels while being completely stainless. The blade is distal tapered, ensuring a perfect balance. The spine is nicely rounded so it is extremely comfortable even when used for many hours at a time.
The Japanese-inspired half octagonal handle is formed from dyed and stabilized curly maple. By using stablized wood, Edward ensures the handle will hold up to the demands of a professional kitchen. The handle is fit perfectly to a stabilized curly koa wood ferrule. A black G10 spacer adds a touch of contrast and will help the natural wood adjust to humidity and temperature changes in the kitchen. This is a knife you won't want to put down!
