Description: Florida knifemaker Edward Ratanun (Edward R Knives) creates a spectacular chef's knife. His sense of design is only matched by his skill of implementation. This utility knife is inspired by the high performance knives of Japan is a prime example of Edward's clean work.
A utility knife is between a chef’s knife and a paring knife, with a narrower and straighter blade. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.
The W2 carbon steel blade features a forced mustard patina to provide some rust resistance and tremendous beauty. The spine and choil have been nicely rounded for comfort.
The traditional half octagonal handle is formed from stabilized amboyna burl. The warm toned wood has a dramatic, swirling figure. The handle is fit perfectly to a stabalized maple burl ferrule. A white G10 spacer adds a bit of contrast and will help the natural woods adjust to humidity and temperature changes in the kitchen. This is a knife you won't want to put down!
