Description: Jessica Burke is the 23 year old (as of the winter of 2020) daughter of Mastersmith Bill Burke. Over the last few years, Jessica has been making some absolutely amazing chef's knives.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arc of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board.
The blade was forged from Jessica's own Bold Twisted Ws pattern damascus. By beginning with 15N20 and 1084 carbon steels, Jessica ensures a keen long lasting edge. The heat treatment followed the formulas developed by Mastersmiths Bill Burke and Ed Fowler. This technique creates some of the sharpest and most long lasting edges found anywhere!
The handle is formed from macassar ebony. The front ferrule is formed from black buffalo horn. The traditional ambidextrous Japanese handle is a style called a half round. It is rounded at the base and faceted at the top. It is among my favorite handle styles and is very comfortable for extended use.
The knife has perfect balance and this ensures it is as much of a joy to use as it is to look at!
