Description: Charlie Ellis first struck hot steel in 2005 and has since traveled from Maine to North Carolina in pursuit of the perfect blade. In 2007, he enrolled in the Hand Wrought Metals program at Haywood College in Clyde, North Carolina. There, he learned a great deal from David Burnette, Mastersmith Jason Knight, as well as a host of others through the school's partnership with the American Bladesmith Society. Since 2014, he has been a full time blacksmith living in the mountains of western North Carolina with his wife and son. Lately Charlie has been focusing on forged chef knives and his results have been excellent!
The blade is forged from Charlie's own fudge ripple pattern damascus forged from 1095 and 15n20 carbon steels. By forging the knife closely to shape, Ellis ensures the knife will have optimal grain structure. The high contrast pattern is extremely engaging and demands attention both up close and from afar. The blade features an S-Grind. A convex ground edge provides high performance chopping with lots of strength. From there, it moves into a hollow as the blade moves toward the spine. This technique lightens the overall weight without sacrificing strength. The combination ensures a high performing workhorse with less resistance cutting through foods that would otherwise stick or wedge. Both the spine and choil are nicely rounded for comfort. Because this knife is made from carbon steels, we recommend using camellia oil to avoid rust.
The damascus pattern flows into the integral damascus bolster. An integral bolster, while common in production knives, requires tremendous skill in a custom environment. An integral bolster brings weight to the center of the knife.
The handle is hand contoured from charcoal crosscut G-carta made by G.L. Hansen and Sons. The handle is carved to provide a comfortable grip - swelling at the palm, moving into a slimmer waist, and swelling again at the end of the handle. This is a knife you won't want to put down!
