Description: It is tremendously exciting to see an increasingly wide range of knifemakers focusing on chef's knives. Knifemaker Jackson Rumble is creating some of the best chef's knives coming out of Australia. A knifemaker since 2008, Rumble has worked at Tharwa Valley Forge since 2016, making custom knives and teaching classes. Inspired by Mastersmith Jerry Fisk, Jackson aspires to constantly push his creative limits and grow as an artist. Rumble was honored as a Journeyman Smith at the 2019 Blade Show in Atlanta. Along with his journeyman smith credentials, Rumble received the prestigious Joe Keeslar Award for best JS knife presented.
The gyuto is modeled after the French pattern chef's knife. This is the essential kitchen knife. Longer and slimmer than the santoku, it is the general purpose chef's knife. The long blade is needed for the sawing motion required to cut meat and the slim profile keeps the weight low and the balance right. Additionally, this knife has plenty of finger clearance for the rocking chop needed to chop onions and other vegetables.
The blade is formed from high performing RWL-34 stainless steel. It is completed with a meticulous hand rubbed satin finish. RWL 34 is a powder metallurgy cutlery steel manufactured by ERASTEEL in Söderfors, Sweden. Because it is made from rapidly solidified powders, the microstructure of the steel is much more uniform. This gives the steel much higher strength and resistance to chipping. The blade is convex ground and razor sharp. Jackson also nicely rounded the spine and choil to accomadate a comfortable pinch grip.
The ambidextrous traditional Japanese style octagonal handle is formed from a stunning piece of stabilized flame box elder. This dramatic piece of wood features spalting lines and a dark red flame figure providing a very elegant appearance. A black G-10 spacer seperates the matching handle and ferrule. This is a knife you won't want to put down!
