Description: I was very excited when I was introduced to Dan Bidinger at 2019 Blade West in Portland, OR. Though Dan didn't have a table, his work spoke for itself. Bidinger brings a tremendous amount of skill, precision, and design to his knives.
This high performance chef's knife is a perfect choice as a primary knife in the kitchen. The long, deep-bellied blade is well suited for slicing vegetables and meats. The gentle arch of the cutting edge is perfect for a rocking chopping motion with plenty of finger clearance over a cutting board. At 5-3/4 inches, it is easy to maneuver safely and effortlessly. This is a perfect choice for the chef that wants an ultra-high performing knife, yet wants the easy care of stainless steel.
The blade is formed from high performing AEB-L stainless steel. Many knifemakers and metallurgists feel that AEB-L, with its small crystalline size, tremendous edge stability and toughness, is among the best stainless steels used in knifemaking today. AEB-L was developed for razor blades with a very fine grain structure making it easy to sharpen while maintaining good edge holding capabilities. The flat grind provides a very efficient cutting geometry. The spine and choil are nicely rounded for a comfortable grip.
The faceted handle is made from black paper Micarta. Blue G-10 accents draw attention. The handle is beautifully shaped for a secure comfortable grip.
