Description: Master Smith Aaron Wilburn has become increasingly well known for his high performance, hand forged chef's knives. This 8-1/2 inch chef's knife has a comfortable design, providing plenty of finger clearance over a cutting board. It is fantastic multipurpose chopper and is sure to become your goto knife in the kitchen, whether slicing fruits, chopping vegetables, or portioning meats.
The 8-1/2 inch blade has a perfect arc for chopping and slicing. The blade is expertly balanced. Aaron forged the blade to shape from 52100 carbon steel. Many makers and collectors feel that this is the best steel available anywhere for use as a knife blade. The blade was then oil quenched multiple times. Many thermal cycles and normalizing steps assure consistent grain structure. Triple tempering at 400 degrees results in exceptional durability. A cryogenic treatment between temper cycles enhances the edge holding ability.
The handle is contoured comfortably for a sturdy grip in the hand. The presentation grade stabilized koa (Acacia koa) has an exceptionally dramic curly figure. Handle scales are set on a full tang and fit perfectly to the 416 stainless steel bolster. The stabilized scales will hold up well to the heavy demands of either a professional or home kitchen. Loveless style fasteners are a nice finishing touch.
