You can think of a paring knife as a smaller version of a chef's knife because, like chef's knives, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The blade is formed from high performing CPM S30V stainless steel. CPM-S30V is an American-made and developed premium grade stainless steel created especially for knives. It is a powdered metallurgical (PM) steel with a uniform carbide distribution and clean steel properties. This gives the blade superior corrosion resistance, toughness, and edge retention. The high flat grind provides a very efficient cutting geometry. The blade features a hand rubbed satin finish.
The handle is made from exhibition grade stabilized curly koa (Acacia koa). The mid-toned wood has a beautiful, curled figure. Scales are set with a central mosaic pin and two stainless steel hidden bolt rivets. A 416 stainless steel bolster seals the front of the handle. White fiber spacers separate the scales from the full tang. This assists the handle to adjust to temperature and humidity changes. The rounded handle is nicely sculpted for a secure, comfortable grip.
This paring knife is accompanied by a custom curly maple saya. This helps protect the edge during transport and storage. The combination of the two curly woods is particularly elegant.
