Description: This chef's knife by Charles Sauer is a tremendous piece. It has a heavier construction so it can be used hard without worry even on denser foods, yet the premium S30V stainless steel blade brings a refined, long lasting edge that will be a joy to use.
The grinds on the blade are meticulously hand satin finished while the flats have been lightly textured to encourage food release. CPM-S30V is an American-made and developed premium grade stainless steel created especially for knives. It is a powdered metallurgical steel with a uniform carbide distribution and clean steel properties. This gives the blade superior corrosion resistance, toughness, and edge retention. A hole at the front of the blade allows it to be stored on a pin, much like an old style meat cleaver. The slightly thicker blade makes this a perfect go-to knife for cutting in between ribs, shaving meat off bones, or processing large slabs of game.
The handle is formed from presentation grade Arizona desert ironwood. Cable damascus bolsters are dovetailed to the wood for a perfect fit. 1/8" hand domed pins are used throughout the handle. The handle is extremely comfortable in a pinch grip and has excellent balance in hand.
