Description: Knives by Kelly Frasier are handmade in NW Montana, utilizing only the best modern materials. His fit and finish are excellent. He guarantees his work to be free from mechanical defects under normal usage and will repair or replace a knife or problem as necessary, as long as he makes knives. This paring knife is a perfect example of Kelly's clean work and will be an absolute joy to use in the kitchen.
Paring knives are a must-have for every kitchen. You can think of it as the mini version of the chef's knife because, like the chef's knife, the paring knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
The 3-1/2 inch blade is 26C3 carbon steel with a meticulous hand rubbed satin finish. This Uddeholm carbon steel is a high carbon, low alloy steel well suited for fine cutting knives. Sometimes called 'Spicy White', this very clean steel is relatively similar to Hitachi White (Shirogami). The resulting blade has an extremely keen, long-lasting edge, yet it is also relatively easy to sharpen on stones. Kelly's touchmark is on the left side of the blade.
Tiffany blue G-10 handle scales are set on the full tang using stainless steel pins. Forest green liners add a nice contrast to the scales. The hand contoured handle provides a comfortable, non-slip grip. Like other knives, this knife should not be put in the dishwasher.
Excellent work throughout!
