This high-performance chef's knife is a perfect choice as a primary knife in the kitchen. The blade is well-suited for chopping and slicing vegetables, meats, and more. The gentle arc of the cutting edge is perfect for a rocking, chopping motion with plenty of finger clearance over a cutting board. At 6-2/3 inches, it is a comfortable size for easy control, yet will get almost any task done with ease. This nimble knife is sure to become your kitchen favorite.
The blade is hand forged 1084 carbon steel. 1084 carbon steel is tough, chip-resistant, and maintains a razor-sharp edge for a long time. Because it is a carbon steel, we recommend using camellia oil to avoid rust and oxidation. The primary grind is satin finished. The ricasso is forge finished. The blade is beautifully thin for effortless slicing. The spine and choil are nicely rounded for comfort. The blade is meticulously distal tapered, ensuring perfect balance.
The Japanese-inspired handle is stabilized curly koa (acacia koa). This durable wood is found only on the Hawaiian Islands and is one of the most sought-after woods for knifemaking. This style of handle, which is called shinogi in Japan (and often called D-shaped in the US), features a ridge that travels along the right side. This helps index the rounded hand when grasped in your hand. The front of the handle is sealed with a black Micarta bolster. Like other knives, this knife should not be put in the dishwasher.
