This high-performance chef's knife is a perfect choice as a primary knife in the kitchen. The long blade is perfect for chopping and slicing. The blade is flat ground, distal tapered AEB-L stainless steel. AEB-L is ultra high performance -- combining the convenience of stainless steel with the ability to take an acute edge and hold it (a characteristic usually only found in carbon steels). AEB-L steel was designed for razors that require corrosion resistance, high hardness, and very sharp edges. Once you try a knife that is made with AEB-L, you'll immediately understand why knife enthusiasts, knifemakers, and professional chefs covet it. The resulting blade has an extremely keen, long-lasting edge. The blade is beautifully thin for effortless slicing. The spine and choil are nicely rounded for comfort. Stabilized curly black walnut from Oregon handle scales are set on the distal tapered full tang using brass hidden bolt rivets. The contoured handle is comfortable in both a pinch grip and a full handle grip. Like other knives, this knife should not go in the dishwasher.
