Description: Mo (Moritz) Baumgartner (b.1997) is a 28-year-old blacksmith from Austria who first learned the craft alongside fellow knifemaker Martin Huber. He initially worked as a blacksmith doing ornamental ironwork for historic buildings and later shifted careers—but never fully left the forge. Over time, Mo’s visits to Huber’s forge reignited his passion, leading him deeper into knifemaking and eventually into videography for Martin’s YouTube channel. Mo approaches knifemaking as a creative outlet, constantly challenging himself with new ideas and techniques.
This chef knife shows Mo's incredible skill at the forge. The shape is based on the Japanese kiritsuke gyuto. Longer and slimmer than the santoku, it is a general purpose chef's knife. The triangular tip results in a detail-oriented, yet stronger tip than the gyuto. The tall profile provides plenty of finger clearance over a cutting board. The long, straight spine is perfect for moving foods across a cutting board after chopping. The kiritsuke gyuto is a perfect chef's knife to grab whether slicing onions, chopping parsley, mincing herbs, or dicing meat.
The blade is forged from Mo's own feather pattern Damascus, combining carbon steels to ensure excellent edge holding. A bar of 80CrV2 carbon steel is welded to the cutting edge. 80CrV2 has extreme toughness and chip resistance, making it a great choice for higher performance knives. The spine and choil are nicely rounded for comfort.
The handle is buffalo horn, hand sculpted to provide a comfortable grip. The buffalo horn scales are secured to a white/black G-10 frame using white G-10 pins. The front of the handle is sealed with a carbon fiber bolster. This knife is lightweight and nimble in hand. We recommend using camellia oil to protect the blade and natural horn handle.
An edge guard is included to protect the knife during storage.
